Guevarra's & Adobros Infuse Filipino Food with Australian Twist

The initiative is part of the third edition of Guevarra’s Taste of the Philippines: A Global Culinary Journey

Guevarra’s by Chef Laudico proudly launches the third installment of its celebrated culinary series, “Taste of the Philippines: A Global Culinary Journey.” This ongoing tribute to Filipino culinary artistry and heritage continues with an exciting new collaboration—this time, partnering with Melbourne-based culinary collective Adobros, led by the passionate Chef Michael Pastrana and Chef Morris Danzen Catanghal.

This latest chapter is a celebration of culinary innovation and cultural pride, where Filipino classics are reimagined with contemporary Australian flair. More than a collaboration, it’s a meaningful exchange—blending tradition with transformation, rooted in the shared vision of bringing Filipino cuisine to the global stage.

A Serendipitous Culinary Connection

The collaboration was sparked during a fateful encounter in Melbourne, where Chef Roland Laudico met the Adobros team. United by a mutual passion for honoring Filipino flavors and heritage, the partnership blossomed into a vibrant fusion of ideas and tastes.

“This partnership marries time-honored Filipino recipes with modern ingredients and cooking techniques,” shares Chef Roland Laudico. “By incorporating multicultural influences and fresh local produce, we aim to serve dishes that remain true to our roots yet reflect the evolving palate of today’s diners.”

Tradition Reimagined

Guests can expect a buffet lineup that pays homage to classic Filipino dishes—while pushing creative boundaries. Influences from contemporary Australian, Mediterranean, and Italian cuisines meet beloved Filipino recipes, creating unforgettable flavor experiences.

Dishes like Tinola and Afritada maintain their soul-warming familiarity but are now presented in new and exciting forms—each bite carrying a story of memory, movement, and cultural convergence.
“I love how food can bring back memories. That’s what we want to do—connect through shared flavors and emotions,” says Chef Michael Pastrana of Adobros.

A Movement in the Making

More than just a seasonal offering, this edition of Taste of the Philippines is a call to action: to see Filipino cuisine as sophisticated, vibrant, and worthy of global recognition.
“We’re showcasing that Filipino food can stand shoulder to shoulder with the world’s best,” the Adobros team affirms. “This is just the beginning.”

Guests can enjoy these special dishes from Guevarra’s x Adobros starting May 21, 2025, as part of the restaurant’s buffet spread.
