Solaire Resort proudly takes center stage as the Official Host Partner of the inaugural Philippine Cocktail Fiesta, a week-long celebration of world-class mixology and Filipino artistry happening from November 17 to 23, 2025. Presented by DrinkCollectiv and DBWY (Drinks Be With You), this groundbreaking festival unites top local and international bars and bartenders for a vibrant showcase of bar takeovers, masterclasses, and cocktail-paired dinners. Both Solaire Resort North and Solaire Resort Entertainment City serve as the festival’s main venues, making them the beating heart of this historic first edition.

Designed to spotlight Filipino talent while welcoming global creativity, the Philippine Cocktail Fiesta features nearly 100 participating bars across Metro Manila, including Makati, BGC, Quezon City, San Juan, Marikina, and Alabang. At Solaire, guests will witness some of the world’s most celebrated bartenders shake, stir, and craft unforgettable cocktail experiences.

The celebration kicks off with Cebu’s Lost Unicorn (John Park & Darrel de Garcia), known for their imaginative and boundary-pushing cocktail philosophies.
November 18 – Quezon Club
Hong Kong mixology legend Antonio Lai of The Opposite House brings his signature multisensory cocktails to Quezon City.
November 19 – Finestra
India’s Nitin Tewari teams up with Chef Tanisha Phanbuh of Tribal Gourmet for a five-course dinner featuring Indian-Filipino flavor pairings elevated through bespoke cocktails.

Hong Kong’s Bar Leone partners with culinary maestro Lorenzo Antinori for an exquisite five-course Italian dinner, featuring standout pairings such as:
