Solaire Resort Entertainment City’s Red Lantern is set to elevate Manila’s dining scene as it welcomes Michelin-starred Chef Zor Tan for an exclusive three-night culinary event from November 14 to 16 at 6:30 PM. Chef Tan, the creative force behind Singapore’s acclaimed restaurant Born—ranked No. 25 in Asia’s 50 Best Restaurants 2024—will personally present an extraordinary 8-course tasting menu that celebrates his Hokkien roots and global culinary journey.

This rare gastronomic experience will immerse diners in Chef Tan’s celebrated “Circle of Life” philosophy—where each dish tells a story inspired by his childhood memories, professional milestones, and travels around the world. Known for his bold and unexpected flavor combinations, Chef Tan seamlessly weaves influences from Cantonese, Sichuan, and Taiwanese cuisines into his creations, producing dishes that are as emotional as they are innovative.
The evening begins with Kanpachi with ginger and watermelon radish, a raw fish salad inspired by themes of prosperity and reminiscent of the Yusheng tradition during the Lunar New Year. This is followed by a reimagined bao filled with Wagyu and oyster, paying homage to his mother’s culinary influence and his time working in Spain.

The menu continues with chestnut velouté with black garlic and macadamia, one of Chef Tan’s personal favorites that showcases his affection for chestnuts. The fourth course introduces an inventive twist—abalone served with chicken fat and premium jade fungus from Yunnan, replacing the conventional monkfish.
A special highlight awaits Filipino guests with the King Crab with fish maw, paired with Talangka rice, a tribute to local flavors crafted exclusively for Solaire. This is followed by a luxurious A5 Wagyu dish accompanied by Soubise, a delicate French onion purée, and Maitake mushrooms.
To conclude the evening, Chef Tan offers two stunning desserts: Bird’s Nest with grape and elderflower syrup, and his signature sweet potato purée with sea salt ice cream, oolong Chantilly, crisps, and snow salt—a perfect finale to an extraordinary dining journey.
