Chef January “Janu” Belardo invites us into her kitchen, showcasing the Filipino techniques and ingredients she is weaving into the Western‑forward menu of Solaire Resort Quezon City’s Quezon Club.
After nearly a year of redefining Quezon City’s after-dark scene with exquisite dishes and a lively stage featuring music, dance, and comedy, Quezon Club at Solaire Resort Quezon City is entering its next chapter.
Welcoming both local and international acts across regular nights and private events, Quezon Club continues to evolve as more than a dining destination—it is establishing itself as a dynamic entertainment hub where food, music, and nightlife come together.

At the center of this transformation is Chef Janu’s vision for the menu, building on a culinary program that previously highlighted cuisines and preparation techniques from Europe and the Americas.
Recognized as Solaire Resort Quezon City’s youngest and first female Chef de Cuisine, Chef Janu is now putting the spotlight on Filipino ingredients and cooking techniques, incorporating them into Western-forward mains and bar bites with technical precision, creativity, and artistry.
“Instead of focusing solely on Western or American cuisine, we’ve infused Filipino influences, not by replicating traditional dishes, but by highlighting local produce and applying techniques like fermentation, preserves, pickling, and marination. From vinegars and sauces to doughs, everything is made in-house,” she shares of the new menu.
A Kitchen Where Filipino Ingredients Take Center Stage
Step into Chef Janu’s kitchen and the creative process is immediately apparent.

Shelves are lined with carefully labeled and closely monitored jars of fermenting chilis, capsicum, fruits, rice, and vegetables, each developing its own distinct character and flavor.
Garlic-infused oils, coconut vinegar, pinakurat, and bowls of calamansi fill the kitchen, while panutsa adds sweetness to sauces and atsara brings brightness and acidity to dishes.

Spicy buro, created by fermenting rice with spices, adds another layer of intrigue to dishes such as the Grilled Octopus, showcasing how familiar Filipino flavors can be transformed through modern culinary techniques.
Even Quezon Club’s bar chows draw inspiration from Filipino street food, but with an elevated approach. Oysters take cues from isaw, paired with Chef Janu’s signature SAUCE MARIA!, which is soon poised to become a household vinegar mix. Elevated grilled pork barbecue takes on a pica-pica presentation, while kinilaw-inspired elements add another distinctly Filipino layer to the menu.
Desserts are not left behind. The Burnt Basque Cheesecake gets an unexpected Filipino touch with asin tibuok grated over the top, creating a surprising savory finish to the rich dessert.
Designed for Sharing, Made for Bringing People Together
Beyond bold flavors and inventive techniques, Chef Janu has designed all the mains, as well as the new house specialty, the Grand Seafood Tower, to be ideal for sharing.
The approach reflects the social nature of dining and nightlife—bringing people together around generous, inventive plates meant to be enjoyed as a group.
For Chef Janu, the kitchen at Solaire Resort Quezon City serves as both a playground and laboratory, where Filipino ingenuity and artistry meet Western culinary techniques. Every jar, ingredient, and plate becomes part of a larger story—one that celebrates local flavors while giving them a contemporary expression.
A New Chapter for Quezon City Nights
As Quezon City’s nightlife continues to evolve alongside the tastes and expectations of today’s nightlife seekers, Quezon Club is evolving with it.
With inspired culinary creations, a vibrant entertainment program, and a growing identity built around memorable shared experiences, Quezon Club moves forward as a destination where Filipino flavors, modern dining, and after-dark entertainment converge.
The latest culinary direction is a testament to the venue’s dynamic spirit and its commitment to creating exceptional experiences for guests.
