This holiday season, Discovery Samal brings festive magic to the table with The Bistro: A Taste of the Holidays, a culinary journey that transforms the classic Christmas carol into a playful, multi-sensory tasting experience. Guests are invited to indulge in twelve exquisitely crafted dishes, each telling its own story while blending creativity, flavor, and seasonal charm.
The tasting begins with A Partridge in a Pear Tree, featuring tender quail on caramelized leeks, pear purée, and sage-chestnut glaze, accented with prosciutto crisp and a rose-hued tuile. Two Turtle Doves follows with smoked duck roulade on lemon blini, cherry reduction, and delicate tuile.
Guests then savor Three French Hens, a rich French-inspired combination of sous vide chicken, truffle potato foam, and red wine sauce.
Four Calling Birds highlights ostrich confit with a golden craquelin crust, chicken liver mousse, and poached quail egg, while Five Golden Rings shines with cured salmon, citrus, and prawn tartare beneath a mango tuile. Luxury takes center stage with Six Geese a-Laying, a foie gras brûlée with wild mushrooms, caviar, and edible flowers.
Dessert begins with Seven Swans a-Swimming, a whimsical white mousse with strawberry-mango compote and a dark chocolate swan, followed by Eight Maids a-Milking, featuring yogurt mousse, milk foam, and Earl Grey tea caviar. Nine Ladies Dancing delights with herb-baked salmon, beetroot and herb foams, and a dandelion flower garnish, while Ten Lords a-Leaping offers bold flavors of grilled ostrich, lamb, and A3 wagyu with sesame rub.
Sweet indulgence returns with Eleven Pipers Piping, churros with hazelnut cream, chocolate ganache, and gold flakes, and the finale, Twelve Drummers Drumming, a duck croquette with foie gras, tartufata cream, gold dust, and edible flowers.
