Park Inn by Radisson Clark once again proved its culinary prowess as Chefs Melvin Tiamzon and Jamaica Juachon brought home the Championship in the Professional Category of the Culinary Cook Off at the One Pampanga Food and Beverage Expo (OPFBEX), held on September 14, 2025, at SMX Convention Center Clark.

This marks the hotel’s second consecutive win after its 2024 triumph, cementing its position as a powerhouse in Pampanga’s ever-vibrant food scene.

Kapampangan Flavors with a Global Twist

With this year’s theme, “Kapampangan Fusion,” the dynamic duo wowed the judges with their winning creation: Pesang Asan en Papillote. A reimagining of the beloved Kapampangan dish Pesang Asan (tuna simmered in rich ginger broth), their version was elegantly crafted en papillote—a French technique of cooking in parchment—infusing tradition with international sophistication. The result: a flavorful masterpiece that paid homage to Kapampangan heritage while showcasing world-class culinary artistry.

Lorenzo Tang, General Manager of Park Inn by Radisson Clark, expressed his pride in the chefs’ accomplishment:
