Appease your appetite as Waterside takes you on a dining adventure across Australia, New Zealand, and Fiji
There is something undeniably captivating about pristine white sands, vibrant coral reefs, and the irresistible flavors of island life. Across Oceania, breathtaking landscapes are matched by rich culinary traditions that offer food lovers an exciting world of diverse tastes and discoveries.
This September, Waterside at Solaire Resort Entertainment City sets sail once again for another memorable chapter of its gastronomic “Eat Around The World” experience. Leaving the shores of the Levantine region behind, this month’s culinary journey travels across Oceania, bringing diners flavors inspired by Australia, New Zealand, Fiji, Hawaii, Polynesia, and beyond.

With a focus on fresh, earthy ingredients and vibrant island flavors, the latest chapter invites guests to explore Oceania one delicious plate at a time.
A Taste of New Zealand to Begin the Journey
The culinary voyage begins with a comforting bowl of Roasted Pumpkin and Kumara Soup, inspired by New Zealand’s beloved pairing of pumpkin and sweet potato.
Silky and naturally sweet, the soup offers a gentle richness that makes every spoonful comforting and satisfying—a warm introduction to the flavors of the region.
For a lighter and more refreshing start, Kokoda brings a taste of Fiji to the table. Delicately cured fish is tossed with lime, coconut cream, chili, and tomatoes, creating a clean and citrusy flavor profile.

The tender mixture awakens the palate with its bright, zesty character without overwhelming the senses, making it an inviting opener for the courses that follow.
Hearty Island Flavors Take Center Stage
The main courses bring the heartier flavors of Oceania to the table.
The Hangi Style Lamb features tender, herb-marinated lamb paired with fragrant roasted root vegetables. Aromatic and satisfying, the dish balances spice and savory meat flavors, delivering a delicious combination that becomes even more enjoyable with every bite.
Another plate worth lingering over is the Hawaiian Kalua Pork, made with slow-roasted pork shoulder and served with banana leaf, cabbage, and pineapple relish.

Succulent and savory, the pork is complemented by a bright fruity finish, creating a satisfying contrast between deep roasted flavors and tropical freshness.
For diners looking to experience the communal spirit of island gatherings, the Polynesian Seafood Luau Platter makes an ideal centerpiece.
The generous platter brings together grilled lobster, mahi-mahi, and prawns, accompanied by coconut-lime sauce and tropical salsa. Smoky, briny, creamy, and tangy flavors come together in a feast designed to be enjoyed around the table.
From the Grill to the Table
The grill selection adds another highlight to the Oceania-inspired feast.
Leading the lineup is the Australian Ribeye Steak, prized for its tender bite and satisfying char, giving way to a juicy center with every slice.
Completing the grill selection are Jumbo Prawns with Macadamia Crumble, bringing together succulent seafood and the buttery crunch of macadamia for a delicious combination of textures and flavors.
A Sweet Ending Inspired by the Islands
No culinary journey is complete without dessert, and Waterside’s Oceania experience ends on a decidedly sweet note.
Guests can indulge in Pavlova, a classic favorite featuring crisp meringue, a soft interior, and bright passion fruit. The interplay between delicate sweetness and tart tropical fruit creates a refreshing finish that is light enough to leave diners tempted to take one more bite.
Those with an especially strong penchant for sweets should also make room for the Sticky Date Pudding, a warm and tender dessert served with a sweet sauce for a comforting finale.
