A Taste of Southern Italy to Begin

The experience opens with a trio of antipasti that captures the vibrant coastal character of southern Italy.

Delicate amberjack Carpaccio is paired with fennel and pine nuts, while Caponata, a beloved island staple, is given a refined interpretation atop crispy toast with king red prawn and spicy jam.

Completing the appetizer course is Panelle, the iconic chickpea fritter traditionally enjoyed from neighborhood street vendors. Here, it is complemented by parsley emulsion and fried capers while retaining the comforting familiarity that has made it a local favorite.

At the center of Isole is artisanal Fregola with clams, a distinctive handcrafted pasta specialty that reflects the islands’ enduring relationship with the sea. Briny seafood flavors are layered with the savory depth of Bottarga for a dish that celebrates Italy’s coastal heritage.

Dessert pays homage to Seadas, a rustic pastry that originated among pastoral communities where sheep’s milk cheese and honey have long been cherished local ingredients.
