Klara’s Seboless Bulalo (Php 650) emerged as a revelation—a dish designed to cater to health-conscious diners who still yearn for the rich flavors of traditional Bulalo without the guilt of excessive fat but still with the meaty delicious taste. Even when chilled by the cold weather of Tagaytay, the Bulalo remained clear without any sebo forming even when the dish is served without a food warming. The meat remained tender, and the broth retained its robust balanced flavor. The broth, neither overly salty nor excessively peppery, but meaty and flavorful. Not being too salty as well was good for our blood pressure leves! This was not just Bulalo; this was a sebo-free masterpiece.

The key to Klara’s Seboless Bulalo’s perfection lay in its meticulous preparation. Before boiling, the bones were expertly roasted, preserving its integrity of the marrow event after long hours of boiling to make a delicious meaty soup. So when served, you can enjoy the marrow by “sungkit” or “tak-tak” intact inside the bone! The way they prepare the bulalo is the native Tagaytay / Caviteno way of cooking the dish. Definitely one of the best bulalo in Tagaytay that you must taste!

While we reveled in the classics, we also explored the culinary horizons with poached Mahi-Mahi (Php 295). The dish showcased the restaurant’s versatility and commitment to offering a diverse menu. The fish was tender and flaky, perfectly complemented by a flavorful sauce that added a touch of elegance to our meal.

No meal in Tagaytay is complete without savoring the local delights. Klara’s sourced their coffee from Amadeo, providing us with a taste of Barako Coffee. The barako coffee was grind with a bit of hazelnut. The aroma of the coffee with the hazelnut got me really excited. It was a robust and aromatic experience, perfect for rounding off our meal. For those seeking something sweeter, the Alfonso Tablea Hot Choco was a comforting indulgence. Their house special brewed coffee called Kape ni Vice is only Php 105.
